I haven't really played that many gory games but for me it has to be:
The House Of The Dead.

Definitely Bloodrayne 2 and Left 4 Dead 2.

For me it's tie between Fallout 3 and Gears of War 2. I mean Fallout 3 is the only game I know of that you can shoot a mutant and then see what was on his mind.
