The Resident Evil series (especially 4) certainly comes to mind when I think of gory games.
Gun for the 360 definitely ranks up there as one of the goriest games I've ever seen. Dynamite blows off limbs, a well placed head shot sends bits of skull and brains splattering across the frontier, and nothing is quite as gratifying (and profitable) as scalping a few redskins and listen to to them scream. But, the Goriest Game Award, at least in my opinion, goes to an old arcade fighter called Time Killers. Though the game is quite dated, with graphics comparable to the SNES, the game itself is as violent as you can get. Each fighter has their own vicious weapons and special moves and as more damage is dealt, limbs begin to fly off, blood sprays , and nearing the end of the fight your characters are usually fighting with little more than bloody stumps.
